so ideally, i need to know whats cheap & suitable if it turns out ok

    thank in advance
    Cheers

Walnut is used because of its combination of beauty and lightness. Beech is used because it is cheap. You don't want to use wood that will wreck your cutting tools so as a first effort use beech. Maple is beautiful and I have seen a stunning stock made from cherrywood. Whatever you can lay your hands on really but not mahogany/iroko or any of the other African hardwoods because they are so tough to work.

    Wood

Do a search on flea-bay for "wood blanks" or "hard wood blanks"
It should bring up various bits for sale of different sizes and types and usualy quite cheap.
Good luck mate, would be interested to see end results

As mentioned, Maple is nice but needs careful finishing. Should not be too expensive and it's quite nice to carve.

    gunstock blank

I'd find a cheap wood that's easy to carve first. You will make all your mistakes on that ( and you will make mistakes ! ) and avoid all that hair pulling frustration of ruining a good piece of wood.
Maple is far too hard to practice on--try poplar or if your funds stretch to it a nice piece of lime.
If you can wait you will find nice blanks at the Woodworker show in the Ally Pally next month.
