    Knife sharpening

    Hi all

    i have a Kershaw gutting knife which i got from my brother in the States. it is quite an expensive knife, £200 plus. But the blade needs to be sharpened. I want to get a top class sharpener. Any suggestions please.

    how about a arkansas oil stone or japenese waterstone? available from woodworking online stores- axminster/rutlands/
    i use a tormek waterstone but that would be overkill for just the knife.

    Assuming that it just needs sharpening in the sense of no longer being as sharp as you'd want, not in the sense of being a spanner, try the Spyderco Sharpmaker. I've gotten my knives sharp enough to shave hair off my arm with one. The stones are quite fine though, so if it's really blunt it'll take a while. I got mine on a certain well-known auction site for about £30.

    ...swear by my Lansky set.

    I use the Lansky system too and it gives a razor sharp edge.

    Thanks guys. Lanksy seems to be the way forward!Have just placed an order for te all singiing all dancing version. Next post will be" How do I use the lanksy knife sharpening system"?

    I use Japanese Water Stones for sharpening Bonsai tools but for my knives I use a Chefs Choice Commercial Diamond Hone Sharpener 2000, I think they are about £250.00 to buy now but I got this one from fleabay.

    Totally self contained it has 2 diamond sharpening wheels and 2 ceramic honing wheels, you only need to use the sharpening wheels about every 10th time it loses it's edge and you get a shaving sharp edge in less than 60 seconds, superb bit of kit.

    If you want to pop down to Southampton I'll do yours for you.

    DMT Diamond Sharpener - The Red one. Cost about £11 at Weston park about 4 years ago - superb, and I carry it in my pocket when out shooting.
    I expect they will be at weston park in September and they always have deales on their stand.

    Hi, the Lansky system is fantastic. I supplemented my set by buying the sapphire finishing stone to put the final polish on the blade.

    Just practice first on a not-so-good blade and make sure you DON'T set the stones at the wrong angle.

    Now how do I know that

    I've got the Spyderco sharpmaker which I enjoy using, gets things shaving sharp, but so does my little £4 Gerber pocket sharpener if the blades not to bad to start with. My mate got one and cut it down to sharpen a cheap carbon steel Katana he bought, it did the job but ****** the hammon but gained an ok edge.

    I use a Jap water stone, steel and strop for my sharpening.
    Once you've learned how to put a good edge on a knife with these, it'll be a skill you'll take with you.

    Cheap, cheerful and very very good. If you don't want to use it on a £200 knife, get one anyway for all your other knives, its the quickest way to get a decent edge I've found yet.
