Boiled linseed oil, Danish oil, Walnut oil... take your pick, none will make it glossy. Takes multiple [thin] coats to get a deep finish. I wouldn't know which is 'best', you'll get as many opinions as there are treatments I suspect.
Whats the best thing to use on a walnut stock without it loosing its nice matt finish. I dont want to oil I and make it glossy!

Low lustre danish oil gives a matt finish i think its about £4 a tin in wilko
walnut oil about 3 quid asda

I use Phillips English Walnut Oil Preparation or Parker Hale Walnut Oil.
As Steve C says, you don't need much.
Tung Oil works a treat but can take a while to dry.
