A quick fill question...

My rifle doesn't have an on board gauge. So I cant tell what pressure its currently at.

Now;
When I top up, the gauge on the tank emits an audible "click" (long before I reach the pressure im filling the gun to.)

Would this be an indicator of the remaining pressure in the rifles reservoir..?

Yes, up until that point you are just pressurising the hose, the valve on the rifle will only open once the hose pressure exceeds the pressure remaining inside the rifle,

the "click" is the valve opening so that tells you how much was left inside.
