    Stock Material's?

Has anyone used American ash hardwood (kiln dried) would this be suitable?

Pretty sure GinB proved you can make a great stock out of just about any hardwood there is.
Id think providing its weight is suitable for your intended use it would be fine (Oak hunting stock anyone? )

Only think to watch in ash is the knots. Assuming the american ash has the same issue the UK stuff does you may want to avoid the tight black knots as they can loosen after time. A company i used to work for takes extra steps to seal and stabilize them prior to applying the final finish, though i don't know exactly what this involved. I was a Draughtsman not a skilled chippy.

The piece I have seen doesn't seem to have any knots at all, and looks a nice bit of wood.
