If I were to buy a new air pistol tomorrow in any caliber for general use not specifically targets, what would the best quality, engineered, accurate pistol I could buy ?
I would not be interested with fiddling with it as it would have to be as near as dammit, just right "out of the box" as I fancy treating myself !

If you want a "best quality, engineered, accurate pistol", you want one of the £1000+ 10M match jobbies.
But I infer you want something more "plinky" and less eye-wateringly expensive.
Unfortunately, most current springers are unimpressive. If you were buying used, I've have a long list of possibles: Webley Senior/Premier/Hurricane (I know, not the most accurate, but very charming in their Webley way), BSA Scorpion, Diana 5/6/10, FWB65/80. And so on.
Of the currently made stuff, the HW70 is definitely a decent option. Me, I'd prefer an old one. Cheaper and better quality/finish.
I hear/read good things about the Diana LP8. Quality, power, and accurate. But a decent used Scorpion does the same for about 150 quid less. And I think the recently-discontinued LP5M Magnum is probably better. But the LP8 might meet your desire for something a bit special.
Marc and I have different tastes, because I don't much like the BB repeaters. If you want a CO2 multi-shot then the Rohms are worth a look (SGC has them, I think), and the S&W 5/686 is the most accurate of the Umarex replicas, with the least bad trigger.
HW45? HW75? Never my cup of tea, but the quality and performance is there.

If we're on the right track with a traditional break-barrel design, maybe look at Geezer's giant LP8, and the IZH-53M as well, if you like vodka?

Without a doubt, you need a Brocock Specialist TAC pistol! Not only is it fantastic build quality, but also looks the part, is quite powerful and not too shabby accuracy-wise. Add to that the hours of fun you can have "Re-loading" and it's the full pistol shooting experience you want!
Edit: This will also require you buying a house in any one of the 427 countries worldwide where these are still available, but that's a small price to pay!

Thought about the LP8 Jagdtiger in the past. Certainly is well built, solid and powerful !

Hi why buy one of the Umerax co2 pistols such as the Walther CP88, Baretta 92fs or the Colt 1911 A1. All three are excellent pellet pistols in their own right. I own a CP88 and they are fantastic. No need to pump like ssp pistols just insert co2 cartridge and yr away.

If I were you and money was no object I'd hunt down an FWB 60 or 80. Diana LP8 is also worth looking out for. I would also stay away from CO2 pistols. They look good but are mostly only good for plinking soup cans at 15 feet. I am not very impressed with my CP 88 even though I have put a 6" Competition barrel on it. Some people report good things about them but not for me. You can also have a look at the Zoraki/ Webley, not the same build quality as a HW 75 but very accurate, a lot more powerful and a lot cheaper. I am quite pleased with my HW 40 but due to its low power it is a strictly 10 meters target pistol. Stay away from Steyr lP pistols, you will end up spending the best part of £1500.00 on these beauties. Their accuracy is mind blowing.

Would a Drulov DU10 be what you are looking for? 5-shot semi-auto, fires as quickly as you can pull the trigger. If you want it to be reliable too, then I'm afraid you need a Steyr LP5/50, but not many come up 2nd hand; I've shot a friend's LP5, and it was great, just buy pellets in bulk!
