The pressure is about 850 psi or 56bar. the Co2 is stored as a liquid so this is the pressure of the gas above it.if the co2 was stored as a gas the 12g would probably only give one or two shots before it was empty.

It's somewhere around 57bar, at room temp.
A liquefied gas has a point where the pressure and temperature "balance" to keep it in a liquid state
The vapour point of CO2 is 5.73 Mpa @20 degrees C, so bottles/cylinders/caplets are filled with liquid (which is why they state weight rather than pressure) once sealed the liquid will "gas off" until it reaches the pressure/temperature balance point.
If the temp is higher the liquid will continue to gas off to a slightly higher pressure.
If the temp is lower the liquid will stop gassing off at a lower pressure.
This is why CO2 guns work better in summer than in winter, they have a bit more pressure when it's warm, & less when it's cold.
