The motor trade have been doing this sort of thing for years, ie taking a well known classic like the Mk.2 Jaguar for example, and then uprating the engine suspension, brakes etc, fitting air con and a hi fi system, and so on, in order to make it drive like a modern car.
These are niche products that only make money because there are a few people willing to spend vast sums?

The Mk.2 Sterling would be even more niche than any classic car. To cover the production costs of tens of thousands of pounds would require a market in the UK which simply doesn't exist.
Unless Sterling think they can sell this product in numbers abroad then it is likely to fail as a business proposition.

It is an interesting idea, and if made the first batch would become instant collectors items.

You only have to look at other quality products produced in the past that in spite of being fantastic guns, failed to make any money for their creators, and ended up being made only in small numbers.
Off the top of my head, look at the Theoben Imperator, the best recoiling air rifle ever made.
Little over 500 made for a worldwide market, not stupidly expensive, no profit though. Even now people are only just starting to cotton on as to how good they were.

The Sterling would struggle even more. I hate to be pessimistic in the face of enthusiastic innovation, but as a gun it is just too specialised to sell in any meaningful quantity? Hope I'm wrong!
