Just for target shooting
Serious target shooting? If so avoid anything CO2 right from the start, you'll only end up chopping them in for something nicer.
For PCP there is the single Artemis pistols at the lower end, HW44 in the middle and serious stuff like Steyr at 1000 plus at the top end.
Or go for a nice spring pistol like the HW40?
If you just want a plink spend 100-200 on your favourite CO2 plaything, Umarex, etc.

I had a lot of use from my CO2 powered Feinwerkbau target pistol, easy to bulk fill from a fire extinguisher and at the time, was cheaper to buy than a PCP model.
All the main target pistol manufacturers made CO2 pistols before moving to PCP, but you can still buy a new one here:

Very capable pistols, probably better made than the Artemis stuff too. Uses standard 12g capsules, but can also be bulk filled.
Too many guns, or not enough time?
Just to be pedantic -that nice spring pistol will be an HW45, the HW40 is a nice single stroke pneumatic.
If you're just starting out you could do a lot worse than an HW40, they are cheap to buy and extremely accurate and they have a good trigger. The HW45 is a beast that requires quite a degree of expertise to shoot properly.
If its. Just for the back garden how about a Beeman P17. Cheap as chips, no faffing with CO2 and nice fibre optic sights
SSPs... HW40, beeman P17, gamo pr45, gamo compact all £100 or less secondhand, recoiless, no gas or air filling to mess with. Or an alecto - great pistols, but more expensive, more powerful.
Springer pistols are the toughest to shoot (unless you get a GISS or FWB65 - not really things I'd suggest for a beginner) but great fun - HW45 is a star performer.
CO2 plinking the CP1/2s. Some of the replica fun guns can also be quite accurate, e.g. the S&W 586, but not exactly target triggers or accuracy
The only beginers PCP pstol i'd suggest is the PP700W - very good value and accurate, everything else too expensive/specialised
If you have a club near you I'd see what ppl have and try some - pistols are even more personal / subjective than rifles, not least due to weight, grip comfort, sights etc all being much more critical than with rifles.
