If you don't want the pelts, cut them down the back & give them a good shake, when you get the hang of it you end up with a rabbit skin full of guts. A couple of chops at the legs & neck, & the scissors on a Victorinox multi tool for the anus & you can have a cleaned rabbit without any contact with the insides at all. I've been doing it like that for years now, When it works right I've got it down to about 20 seconds from dead rabbit to oven ready.
