I would recommend a second hand HW80 as the price and waiting time for a new HW80 in .25 is prohibitive.
I bought a second hand 80 and then swopped the barrel out for a new one I bought from Knibbs

There's a .25 Hatsan in the sales section at the moment.

They are only £82 brand new from Pellpax, they also have the wooden stocked Hatsan Striker 1000X Wood Air Rifle .25 on pre-order for £140. I presume that means they have a batch coming in, which might mean wooden stocked .25 Hatsans will appear in most Hatsan stockists ?

I agree with everything said so far. HW 80 is top. The Hatsans 55 with the quattro trigger is pretty good. My Hatsans shot best with Marksman pellets, which are half way between round and flat head and really destructive at up to 15 yards.
.25s smash up tin cans in a way that you just don't get with any other calibre.
Saw about the pre order wooden stocks at Pellpax. Might mail them to see what the date of arrival is expected to be. The Cometa .25's are also a contender from what I've read on here & the other channel.
Can mangling is my chief enjoyment nowadays, once I've sighted in a gun. Although rats on the bird feeders are 'dealt with'.

Just for a curve ball you could try the old vintage BSA Model D which was available in .25. Coming up occasionally at Auction.
The only reason I went for one was because it came as std with the flip up aperture sight, unlike every other model which required the separate purchase of a suitable aperture sight and letting in the wood to fit it.
I did not buy it specifically for the .25 aspect, however what a gun it was.
25 yard 1 inches with .25 Caledonian despite being perilously close to the legal limit and even better consistency with White Rhino for 1/2ftlb less.
Not sure you will find either pellet these days though but for everyone else's information this gun did not suffer with the loose bore that all 5.6mm BSAs did (requiring Wasp Pellets)
In .25 it was actually slightly tight on .25!
Another BSA to consider is the 635 Magnum, based on the Mk3 BSA Mercury (not the better S version)
Production much shorter lived than the much older gun above you might struggle to find it.
All 635 Magnums needed a bit of de tune to be safe with Caledonian. Most doing 12 ftlbs.
Mercurys were already powerful guns stock in .22!
